When you find those extra (large) end of season courgettes hidden under dying leaves in the veg patch . . . Make CHUTNEY! I spiced this one up with some fresh root ginger and cinnamon.

Cinnamon has polyphenol antioxidants and helps with blood sugar management, whilst ginger is anti inflammatory, and great for those stiff joints.

There was such a powerful aroma of Rosemary that hit me as this pud’ came out the oven! An upside down pudding with pears that have turned a warm caramel colour from using a mix of brown sugars with the butter. (Sorry if those two words make you wince, but wickedly delicious desserts will always be on a celebratory menu here . . .😋), and including a herb like Rosemary not only adds surprising layers of aroma and flavour, there are health benefits too . . .

The herb Rosemary contains two polyphenols: Carnasol and Rosemarinic acid, that support and interact with the central nervous system. Research has shown they promote cerebral blood flow, stimulating cognition and memory function, by exerting nerve protective activity. Small, regular doses of these polyphenols proved optimal for achieving these results.

So several sprigs were finely chopped and added to the flour/ground almond mix too.
PS: Eating puddings occasionally, in moderation, i.e. once or twice a week as a treat, should not induce guilt!

My clinic has recently seen a steady flow of young women seeking help with their diagnoses of Polycystic Ovaries (PCOS). Several have been classic ‘insulin-resistant’ cases of PCOS, requiring dietary intervention, but one was actually an inflammation induced case and another was simply a loss of ovulation and menstruation from being hyperactive and underweight. A case of Hypothalamic Amenorrhea rather than PCOS in fact.

Yes, they all revealed polycystic ovaries on an ultrasound scan and showed clinical signs of raised androgens (facial acne and excess body hair), but there are crucial differences, for one - fasting insulin will always be low in cases of Hypothalamic Amenorrhea. These cases will require the opposite dietary interventions: more food and less exercise.

A client actually recommended the recipe book by Laura Strange: EAT & ENJOY GLUTEN FREE, and if the success of this traybake is anything to go by, the book will in time become well-thumbed, stained, and bear the hallmarks of an often used, well-loved cookery book.

The spice mix of turmeric, paprika, mixed herbs, splash of balsamic AND the finishing touches of minted yoghurt, may seem like overkill - the equivalent of that over-designed dress working too hard with too many details, but believe me - this recipe really works, I watched a roomful of people go back for seconds.

You can play around with different root veg too, I added celeriac once, and another time cubes of butter nut squash. And courgettes. I also used pine nuts instead of pomegranate seeds, but play around with your own versions, I’m sure they’ll all be equally delicious.
